Recipe Challenge Submission by Heidi Johnson: Shell Lasagna

Shell Lasagna
4 eggs
1 cup grated Parmesan cheese
1/4 tsp. ground black pepper
4 cups cooked small shell macaroni
1/2 cup each: minced green bell pepper and ionion
1 (26.5 oz.) jar/can spaghetti sauce
2 cups shredded mozzarella cheese
pepperoni slices (optional)

1. In a large bowl, beat eggs with Parmesan cheese and pepper; toss with hot, cooked macaroni.
2. In a 13 x 9 inch baking dish, sprayed with cooking spray, spread macaroni mixture into the bottom.
3. Spread sauce over macaroni; sprinkle with vegetables and mozzarella cheese. Top with pepperoni slices if desired.
4. Bake, uncovered, at 375 degrees F for 20 minutes or until cheese is lightly browned.

Health Tip: Use whole grain macaroni noodles.
